The biggest hypocrisy in this whole tax discussion is how liberals claim taxes on “bad” things - sugar, tobacco, alcohol - will reduce consumption. They’re probably right. So how can they also be against a tax cut on income? Are they anti-income as well?

I agree. Part of the thing the ones that decry the tax miss is that it helps balance the stupid subsidies given to the sugar/corn industry. We give corporate welfare to the most unhealthy crops. If we spent the money subsidizing the most healthy foods like fruits and vegetables we would be much better off as a country in multiple ways.

To be fair, the poor people are also the ones taking advantage of Medicaid. So anything to deter them from making poor health choices on the front end can end up saving thousands on the back end with healthcare costs. If they want to make poor health chooses that’s fine but make them pay for it.

Just cut subsidies.
Poor people will simply drive out of the city to purchase their sweets. It will hurt merchants, not producers

It's not necessarily that the tax revenue goes toward that, it's the fact that taxing unhealthy things reduces consumption, which should lower health care costs. This saves everyone money.

Ran into this in Chicago a couple months ago. This was in September and it was still in effect. Picked up a couple diet drinks at Walgreens and they were taxed. Can’t get by the law with diet or zero drinks.
ETA they were 1 cent an ounce taxed. The total taxes came to 24% with sales taxes and sugar tax.

You are absolutely correct and I agree with you, however, Seattle can't cut the federal subsidies.
The bigger issue is whether social engineering like sin taxes are good policy. Often they do help cover the societal costs of the "sins" which the users and providers don't pay directly.

It's exactly what they started doing when Philly passed such a tax. Sales dropped within the city limits, increased in the bordering townships.
