I once cooked a brisket that was so dry, you could have struck a match on it.

I once cooked some ribs on the primo. I got the fire and temp where I wanted it and took a 30 minute nap. Turns out I left a small crease in the deflector plates and the rendered fat blew the fire up and caught the ribs. I woke up to a couple racks of ribs that looked like Thanos 86d them when you blew on them

Those chicken thighs will still be very good, they are very forgiving when the skin burns.

Meh, I don’t agree. Maybe he spent a good chunk of what he had on this meal and wanted to get it right. Dads that work long hours don’t get many opportunities to do something special for the family. When everyone is hungry and you mess it up, that’s a feeling of failure for sure. I give him a pass.
Guy needs to get him some low quality, hard to cook cuts and get that practice in.

Don’t give up. Good ribs are an investment in time. Remove the silver membrane on the back, smoke over indirect heat, wrap in foil to cook in the oven and then finish them on the grill with bbq with in direct heat. It takes about 6 hours to cook them properly.

I cooked the PERFECT chicken quarters once. Just fricking beautiful and juicy. I accidentally used the wrong rub that was hot as frick making them pretty much inedible for everyone at the cookout
These chicken quarters were my fifth symphony. Crispy, colorful, just perfect. And I fricked it all up with a rub
It honestly had me jt a legit bad mood and I was short with everyone the rest of the day

I've witnessed several men ruining ribs by cooking them from raw over direct high heat on Weber type grills. I've seen people doing this pretty often at parks and beaches. But I've found it's better to let folks learn on their own as people can be pretty defensive about their cooking.
I have a feeling this guy will be studying a few recipes next time he spends a bunch of money on meat and he'll do much better next time. Money is a great motivator.

Once I had control of the coals most everything else worked itself out with some trial and error

I like to finish my smoked chicken/wings over direct heat to crisp up the skin and & give it some light charring as I sauce them
