1) Sorry for your loss.
2) I am going to guess your family is not a frequent/regular attendee of Mass and parish activities. You say your mom attended daily. If so her priest will pull away just call him.
Seriously, if your mom is that devout she has cell numbers of priests.

Check with a parish that has "religious" priests and not diocesan priests. They may have someone not on retreat. This is not uncommon, Louisiana has a priests' convocation every two years and every priest in the state is supposed to be there.
Is this for the Diocese of Baton Rouge? Baton Rouge has a new bishop, Michael Duca, only a few months into his tenure. Heck every bishop in the United States just went on retreat last week to pray about and address the clergy-sex scandal. Nothing new under the sun.
Oh, a "recovering Catholid" none so anti-Catholic as that. I am sorry for the insult, and praying for her soul and consolation for your family.

Have you actually spoken to the priest in your MIL's parish? Call the rectory/office this morning and tell them what is happening.
The idea of "wait till next week" is so obscene that I can't believe it is true.
If the training is local, the priest will come.
If they truly cannot, there are retired priests that I'm sure could do the ceremony, but do you think your MIL would have wanted a particular priest?

This exact same thing happened when my father died. I attended a Catholic HS that had priests as teachers. I called up the school and explained the situation and they sent a priest to do the funeral.

OP. Find a non-diocesan priest. Our church is still having full daily mass once a day with a retired/non-diocesan priest
And I believe they’re only on retreat through Thursday.

It appears that this was likely planned a while ago, as well. Priest convocation in New Orleans or for the whole state is usually in September.
