She is really cheap and saves. She has a very strict budget. But she likes to travel so she sacrifices on some things to do other things.

It can be done around LSU.
I made 42k last year.
That's 1,600 every two weeks.
~12,000 of that went to LSU. 5,000 in the fall, 4600 in the spring, 2400 for summer.
I would literally take one check, put it in my savings to pay for school, use the other check for living expenses
That doesn't even include books.
Paid 350/month for a less than desirable bdrm in a condo owned by a family member.
200/month for insurance because i bought my car with cash.
200/month for groceries.
utilities split 3 ways totaled about 75/month. We didn't have cable (still don't)
250 for eating out
500 for misc. things like going on nice dates/ drinking until i couldn't spell my own name.
I haven't taken a vacation since i started at LSU in 2013.
I work 40 hours a week during school/60 hours a week during winter and summer break.
In fact if I have any extra money I use it to pay for summer classes.
Going to graduate this spring with 0 student debt, a paid of car, and no CC bills.
ETA: sure I could trade the tuition for mortgage and just take out student loans, but thats dumb. Moving to Dallas once I graduate for a job.

OP said "allow a house" not own a house. Renting a house qualifies. I rent and I save. I put 8% of each check into my 401(k) and my company matches up to 6% on top of that. Plus I always have extra money in the bank. Your math is fuzzy.

Yeah I am leaving the field for a fixed facility at home. I'll take a little bit of a pay cut but still be 100k+ on top of her 43k or whatever she makes as a teacher.
She is petrified we will have money issues. I am befuddled.
I would have to say 50k for me being the "comfortable" pay. In reality, I was making $750 a month as a GA in grad school and survived.

This is false. Made about that much, maybe slightly more, while waiting tables for a couple of years. Partied nonstop. Travelled when I wanted to. Took off work when I wanted to. Never had a problem with money--on the off chance it got a little tight towards the end of the month, I'd work an extra shift or two.
$35,000 is plenty for a single guy.

but I did live for about 6 months by myself on $35k as well with a $900/month rent

Thanks Drinks, believe me there are many nights when I am at work cleaning up after a bunch of idiots at 2:30 AM with a 8:00 Am class the next day. I have some pretty serious look in the mirror moments.
i grew up in a struggling household (mostly due to the fact that my family chose to send us to catholic schools).
I'll be damned if I am going to recreate that situation for myself.
