Can you link some
studies that discuss “wherat belly”

I am not going to defend high sugar bread as good for you, but is it wheat or sugar?

Bummed when I found out it had added sugar.

My mother taught me how to make my own bread back in the 70's. She did all of hers by hand. I bought a bread maker when I had my own family in the 90's, and I've been baking my own bread off and on since then.
I started grinding my own wheat back in the 90's, too, after I realized that the preground wheat sold in grocery stores smelled rancid, and the resulting bread tasted bitter.
I used to believe that wheat was bad for me; I even read the Wheat Belly book. I no longer believe that; I think it's simply a matter of moderation and sourcing my flour carefully.

Pretty easy as there are no GMO wheat varieties grown in the USA.

We arrived LEGALLY (parents waited 10 years for a visa), father went to work within 3 weeks of arrival, kids were placed in advanced classes 2 years ahead of grade level, and mom stayed home to take care of kids and household, and learn English. We took not 1 penny of government money. So no, we won't go back and we will only support legal immigration for folks who have something to contribute to this great country of ours. Now, back to bread,,,

My comment was related to "non-GMO flour" not avoidance of wheat.

I mean i googled it and saw a lot of studies in journals for the cereal industry slamming it, but are there any studies supporting it .

My wife wife has always been an amazing baker but recently started with sourdough from scratch and godamn it’s maybe the best bread I’ve ever eaten regularly. Even good bread from the grocery isn’t in the same stratosphere.

there are several really good low-carb bread out there. The one that taste the best is made by Sola. Each slice has 1g net carbohydrate. There are also some very good ones that have 0 g net carbohydrates.
If you are eating keto then this makes a really big difference. In addition these breads are loaded with fiber and have a decent amount of proteins.
