As a couple other have said Focal is good brand that has some good sounding components that arent too expensive. Crutchfield has a good selection of their products LINK

If it’s been sitting up for a while you’re probably going to need to change your rear main seal and possibly your oil pan gasket and perhaps other gaskets for a couple of grand.
If you’re lucky you can use a treatment like blue dolphin or Barr’s and recondition them through the oil.

Crutchfield is a decent site to look at what's out there and how much it costs. I'm far from an expert so I can't make any recommendations, like you I haven't had a car stereo system installed in a long time

Keep it stock and don’t cave to the masses.
You’re gonna start down this road and spend money on wheels, tires, tint, stereo, hydraulics, phone antennas, and curb feelers.
And horns on the hood.

I’d paint it black or silver
tint the windows (not black out tint though)
new radio head unit and replace the door and 6x9 speakers
Other than that I wouldn’t do a damn thing else.

Some real talk for you, baw. Some of these OTers are stuck in the 90's and some others are apparently jealous.
You should be about fidelity these days rather than boom. Boom is bullshite over age 30. You only need one sub. You want a modest thump. Something so you can feel the kick in your chest, but not nearly enough to rattle the windows in your neighborhood, or trailer park as it were. A single 10" or 12" enclosure is all you need. You're going to be listening to the smooth fusion sounds of Steely Dan now to match that ride, baw. You need to hear every damned note of Jeff "Skunk" Baxter's guitar solo on "Rikki Don't Lose That Number". Ya feel me?
You can go somewhat inexpensive on the sub because you're going to pump only the arse-end frequencies through it, and those frequencies are omnidirectional. Do yourself a favor and dedicate an separate amp to the sub. You don't need a lot of power. Don't worry about about "hard hitting" shite. You just want riders to know you got something in the trunk, like Kelly Clarkson in her heyday, yet you can still accommodate you're wife's foray into Kelly Clarkson's playlist on those longer drives to the deer lease or the tarpon rodeo.
For the 6.5" and 6X9", you should look at JBL, Infinity, JL, Polk Audio. Cerwin-Vega makes good stuff, but I think they're pricey and there are decent speakers to be had at a lower pricepoint. You're after clarity. No distortion. A decent 4 channel amp--JBL, Rockford-Fosgate, BOSS Audio. You don't need to break the bank, but you want something with clean power.
For the head end, you can dump a ton of cash into fancy, mechanized LCD stuff. I would stay away from it and get something from Sony or Kenwood that fits with little or no dash modification. I would also invest in equalization with a separate sub pre-amp output. A relatively inexpensive addition will give you a significant performance boost. Not that flashy lightshow BS. Just good old fashioned faders that allow you to tune your system to meet the expectations of such a fine automobile.
Then ride like a true pimp daddy in his Caddy.
