I don't think Finland or Sweden need to join. They're essentially NATO countries that aren't financially obligated but still share resources and criss train with NATO.

from a college kid who knows very little about foreign politics at this point in his life, what are the chances this actually turns into a full blown war with other countries stepping in?

I'm no expert, but in my opinion not much if Russia does not push further than Ukraine. If Putin pushes into a second country, the shite will hit the fan..

Likely small, IMO.
I think the most involvement we'll see from the west is likely sorties, small arm and humanitarian supplies, and logistical assistance (evacs, etc)

If they join, to me, it’s just a sign of fear and them making sure they lock in guaranteed help if invaded. I think that’s all it’s about is the guarantee.

We’ve essentially guaranteed Taiwanese security without necessarily saying it for a long time. Taiwan is VERY important to global technology inputs, specifically chips.
If Ukraine and Taiwan both come under attack, that may lead to unified western response and all bets are off there. If not, the next moves available to Russia and China both most likely kick it off, particularly if Russia’s next move is in the Baltic’s.

In addition to them being an absolute technical juggernaut when it comes to semiconductor manufacturing (as others have mentioned), China basically expanding into its adjacent free city-states and saying "meh you're communist again" is a pretty worrying trend

I would say right now 10%.
