Texas has good food, but not LA good.
I find the seafood in Boston to be excellent. It’s different because the fish is different.
I thought Italian in New York to be good but honestly no better than some of the Italian places in Nola. We also ate at Juniors deli. Food was fine, cheesecake was oh my god good. And they ship.
The food in Seattle was boring. The food in Florida was boring.

No. Every big city - Houston, Atlanta, Chicago, etc - has more and better great food than Louisiana. It did not used to be that way, but they are all cosmopolitan now. Hell, Salt Lake City even has great food.
What New Orleans has, that I haven’t found anywhere else in America, is very good mid-price point food everywhere.

One of the best meals I ever had was fresh grilled rainbow trout at a little place right outside the North entrance of Yellowstone. Place was right next to a mountain creek so it was fresh as could be.
I’ve been to almost every state in the lower 48 and I will say you can find good to great entrees everywhere but in my experience outside of the south the side items with the meal are not near as good.

Once I left, started traveling by for work, and began elevating my palate, I actually found my fondness for La cooking to be rooted more in nostalgia. Now it’s tough finding a La restaurant that doesn’t disappoint me.

Louisiana food is great and unique and that's the biggest feature. Gumbo, etoufees, shrimp and grits, po' boys, jambalaya etc. Outside the state or the immediate gulf coast its hard to find places that actually do it well.
With that said, Louisiana itself absolutely lacks variety. Yes there places that do Thai, Italian and indian etc well and you can find them. But just like we enjoy the mom and pop shop that cooks our local cuisine, a lot of the bigger cities and other places have those places as well with different cuisines.

I’ve found that you will find great food almost anywhere in this country if you are looking for that. It’s not really magical. It’s just a want to.
Louisiana does what it does better than anyone else does what Louisiana does, and New Orleans does some of the best, and is respected for that too, but that certainly does not mean there isn’t exceptional food outside of Louisiana. That’s just people talking who have very little experiences outside the state. It is kind of that moral boost when people are feeling little. “But you just can’t find better food than in Louisiana”. Nonsense.

But Florida has some amazing Cuban food. Texas BBQ is world famous. Mississippi and Alabama have some of the best soul food on the planet. Kansas City and Memphis can put it down on the grill as well.
Everywhere has a uniqueness.
Except for the Yankees and Midwest. They suck at cooking

Everyone has their regional foods that are unique and delicious for what it is. But if you’re looking for Louisiana cuisine outside of Louisiana, you’ll be disappointed most of the time

If you’re talking about the original location, it’s in a little town named Mason, TN northeast of Memphis.
I find Gus’s good, but not great. JMO.
I do miss South LA cooking. So I routinely make a pot of something once or twice a month.
Memphis is good for pork BBQ. Texas good for brisket. Boston has great food too. Cali has good light dishes.
I think the key is to just find that places’ specialty food and enjoy it.

I moved to Texas 25 years ago and couldn't be happier. Mexican/TexMex suits me just fine and I still can get cajun/creole when I want or just cook it myself.
FYI, I'm cooking red beans with Best Stop tasso and andouille tomorrow.
