Isn't an electric smoker basically and outdoor oven? So your making roast not smoking brisket.
I've been around bbq culture my whole life and I was raised in my area that smoking is about burning wood. I understand set it and forget it so I use a kamado grill using lump charcoal and would chunks most of the time.
A kamado or pellet grill is just as set it and forget it as any method and uses wood products as the heat source. When I get my kamado going I dont touch it the whole brisket cook. I can leave the house, go to bed, etc.
My backyard collection has grown into a heavy offset smoker, a vision kamado, and a Weber kettle. I use all three for different things.
It's cool you guys are happy with the electrics. I dont have any experience.
I am really surprised at the amount of love they are getting.

No, it's not just an out door oven. It burns wood chips, or wood pellets if you use a pellet tray like I do.
It's no different than smoking in anything else. you have hot smokey air traveling around your meat.

I have a custom one from Boathouse Smokers in French Settlement...look them up on Facebook. They are gaining a good reputation nationally and can custom build anything. Mine is a first gen and from what I hear they have come a long way!

These Butts are the very first thing I ever smoked and they were on my Master built electric w/ pellet tray.
They came out perfect and better than just about any bbq I've ever had.
For newbies I think they are great cause it's pretty hard to screw up with them, you don't have to learn how to "dial it in", and you don't have to mess with it at all if you get the pellet tray.
Since then I've done ribs, chicken, and more butts and everything has come out great. Just had to make sure I pulled it at the right temps to wrap, and then when they were done.
They came out perfect and better than just about any bbq I've ever had.

Rub it with a store bought rub.
Put a probe in that beeps when it hits the temp.

Whats the gist of how that bbq guru thing works? Im always looking for things to get my BOL, and that maybe good with his birthday coming up. He has a couple BGEs. I think one XL and one L. They seemed to have a few options, so not really sure which is sufficient.

It’s a fan that monitors the temp and kicks on to maintain the desired temp.

Smoking, in general, is not a particularly difficult job. No one in the electric cooker camp is trying to have a dick measuring contest over their amazing bbq skills, but for some reason the old fashioned guys have to make jabs about “skill” “real smoking” “outdoor oven” etc.
No one is impressed with your fire tending acumen. I did it for years, a trained baboon could do it. If you like doing it, good for you.

This! I can get a brisket up to the specified temp in a few hours. I can also cut a piece of shoe leather that will be easier to chew.

Electrics are easy - set it and forget it. Don't have to check, add wood, etc.
Turn it on, go to work, come home, eat.
And even the womens can use them.

Good looking stuff. We are looking for one for the office, wouldn’t mind keeping it local.
I have this at the house and it’s a damn good smoker. Can do a packer brisket and a couple 7lb butts at one time. It isn’t huge, but it has a small footprint and it’ll hold 225 for about 4-5hrs on a load without touching it. Plus you can grill on the firebox.

I have a 26" Weber kettle with a Slow n Sear in it, I smoke stuff in it a good bit and it comes out fantastic. Anyone that has a Weber, I highly recommend the Slow n Sear: it makes smoking and offset grilling so much easier.
My old roommate had an electric smoker, while the ability to set a temperature was nice the hopper where you loaded pellets was way too small and it only lasted about an hour before needing more. I believe it was a Smokey Mountain smoker. The results were good but doing something like a brisket was impractical because you couldn't put it on at night and check on it once, you had to constantly add pellets.

30 dollar Brinkman. Had it forever. Proves it really ain't how much you spend on the smoker. Doesn't really matter. And, not too hard to learn how to prepare and cook well. I'd say the cut of meat, its quality, is more important, actually, than anything in the process.
Been using the cheap trash barrel shaped Brinkman for many years. Actually have two and can still buy the pans on ebay for cheap.
