Winston Churchill - rallied the UK with Germany knocking on the door
Erwin Rommel - get his thoughts on Hitler and what they were trying to accomplish, was he with Hitler or just loyal to Germany
Doc Holliday - just a badass gunfighter from the South

Chesty would be a great choice.
I bet that old Virginian has a badass collection of whiskey. One of the greatest southerners of all time.

John Prine would be one hell of a dinner guest.

Albert Einstein. I’d want to analyze and find out if his stint in a patent office had anything to do with his intellectual ability? Or was it just that he was simply an unbridled genius.

I got to meet him briefly backstage at the Alabama Theatre many years ago. Just as kind and funny as you'd imagine him to be.
ETA: Fr33, look up, "Bill Shakespeare Was a Big George Jones Fan". Excellent doc on Cowboy Jack that should be available on the internet.
