You are "storing" an expensive car for someone you don't know. You're not in the business of storing vehicles, right?

Anything in writing?

What if something happens to the car while it's in your possession?

You're driving it sometimes. Proof that it's properly insured? Does your homeowner's policy cover any damages to a vehicle you are storing on your property that you don't own?

Are you sure he's the sole owner of the vehicle?

I suggest you tell him to come get the vehicle asap.

Insurance company has been called. All good there
Registration is in his name and valid
Have both his phone numbers and a written letter of consent

Talked to a couple cops and they told me there is nothing illegal about me driving it.

Searched car and nothing out of the ordinary there

Do you even know how to drive something like that? I rode in one a few years ago with a car nut friend(600+ hp, paddle shifts and all) and quickly acknowledged that I would go straight into a ditch with that much power. He could make that MFer peel out and fishtail while already going 40-50mph.
