I don’t refrigerate ketchup, nor mustard (except zatarain’s creole, b/c it says it’s required after opening).

Heinz “ recommends” refrigeration. It’s not “required”.

My refrigerator space is at a premium, and nothing that doesn’t need refrigeration gets it. And I have 2 refrigerators, so don’t start with me.

Do you not realize that a lot of things don’t actually need to be in the fridge? Ketchup, mustard, butter, soy sauce, fish sauce. Use some common sense.

I worked at a burger place that had ketchup bottles on each table. Every shift the bottles were refilled from gallon size cans of ketchup. The ketchup in the bottom part of the bottles may still be the same ketchup from when I worked there in the 80s

My MIL doesn’t refrigerate mayonnaise.
She says that if it’s never refrigerated you don’t need to.
However she’s quick to refrigerate potato salad or deviled eggs or any other dish with mayonnaise.
Been knowing her 40 years, she’s always done it this way.

It's true. I've seen many restaurants refill bottles of Heinz with generic in cans like this

I know what the container says, but that stuff is designed to sit on a diner table for weeks.

Only brainless lowlifes refrigerate their ketchup. Have your ketchup warm like a man.

I was at the Chimes late one night in the '80s and I saw that part of a waitress' job there was to refill ketchup bottles. What they did was to balance the less filled bottle on top of the more filled one and let the ketchup drip down.

If eggs aren’t stored or shipped cold, they don’t need to be refrigerated either.

True, but it's kind of a roundabout reason. Refrigeration isn't required fresh out of the hen, but refrigeration requires more refrigeration.

In the US, you'll never see factory farmed commercial eggs non-refrigerated since the USDA requires washing to combat salmonella. In the US, we don't vaccinate laying hens against salmonella, so the outside of the egg can pick up salmonella from the hen. The washing gets rid of the salmonella, but it also destroys a thin protective layer on the outside of the egg that serves to make it non-porous. Now the egg is salmonella free, but other opportunistic bacteria can get in. So, refrigeration is required to keep any opportunistic bacteria at bay. It also doubles the shelf life of the eggs over a non-refrigerated egg.

If you get your eggs from your own chickens or a friend that has chickens or you are in Europe (where they typically DO vaccinate their laying hens against salmonella), they haven't been subjected to the washing process. The protective layer is still intact and they will keep for weeks without refrigeration, just like they would if they were in a nest with a hen sitting on them. Refrigeration will still extend their shelf life, it just isn't required to prevent opportunistic bacteria from colonizing your eggs because your eggs will protect themselves.

Washed or non-washed, though, refrigerated eggs must remain refrigerated because they'll sweat like a glass of ice water in warmer air. If you don't use them immediately and let them sit, they can start growing mold or mildew, and that's not Good Eats.
