I have eaten my allotment. Now do you prefer your salsa warm or cold. The two main chain Mexican restaurants in Houma serve it two different ways. La Caretta serves it cold, while La Casa serves it Hot.
Houma does have few more ethically Mexican restaurants, but they are hit or miss especially with food inspections and some have truly authentic Mexican dishes.
Most of what people consider Mexican restaurants are really Tex-Mex restaurants.
After going to some of the more authentic Mexican restaurants in Houma, there is a difference. There is one place I have eaten that has a bone/blood soup with tail bones. Another place one time after I ate there was on a list of the most food inspection violations.

You have clearly not priced any “commercial” real estate lately. It is a business model that hasn’t changed since feudal times. It is also fueled by endless hope and desperation - “but my restaurant won’t fail.”
Alternatively they are short term and are absconding with sales tax.

In my area, i.e., known as the "Irish Ghetto," we have 12 Irish pubs within a half mile radius; and, on their menus, they all have Irish nachos, Irish tacos, Irish green chili stew, and Irish Margaritas.

If you’re flat broke, you eat : Beans, rice, cheese, cheap ground beef, bread(tortilla.). That’s about 60% of a Mexican restaurant menu.
Food costs are low, labor costs are low, a lot are family/friend run and some of them crank out delicious variations of food.

Rednecks and marketing. Rednecks love them some beans and rice.
Also just the overall marketing of Mexican food. They portray a Mexican restaurant as a mini fiesta.....fun for mom and dad and the whole family.
The Mexican guys I know however, don't go to most of those restaurants....most are for the gringos. They hit the ones in the Mexican and C.American neighborhoods that don't serve what we Gringos consider "Mexican" food.
Also just the overall marketing of Mexican food. They portray a Mexican restaurant as a mini fiesta.....fun for mom and dad and the whole family.
