I can only think of 7 Mexican restaurants in Ruston but I completely understand your point. I was surprised to see the new one open.

I used to work in downtown Birmingham. The building next to us had a food court at the time. The Mexicans were the cooks at the Chinese place. There was a Mexican place with a couple of black guys cooking. There was an Italian place briefly with an old Irish lady running it. None of it made sense.

The food cost of a Mexican restaurant is ridiculously low. If it’s run be actual South Americans then the staff is generally all family making labor costs low.

American run Mexican restaurants are a losing venture but if you’re willing to pay yourself very little and your staff even less you can stay in business for a very long time.

I’m counting food trucks too. I think it’s about 10 restaurants. BTW, the old Z Buffet is supposedly becoming a Mexican restaurant too.

Mexican people will live 4 families in a 2 br a bath house and not think anything about it. I admire them for that, they don't need much. So they can start a restaurant and only need about a $200 profit per month.

I heard that superior on government had the best margins of any restaurant in Baton Rouge.

I am now in a little okie town...

1 great Mexican resturant.. then McDonald's, Braums, Happy Days Diner. Sorry burger joint. Sucky pizza place and Subways...
