It’s pretty common knowledge that many Mexican restaurants are laundering money.

They typically are anchors or stoping grounds for illegal immigration. They are owned by one family and then they hire family of guys that own beef, produce producers etc and they slowly bring over relatives in exchange for cheap prices etc.

In Baton Rouge, there are multiple Mexican restaurants that are owned by Arab guys. Most Mexican food is so cookie-cutter now that it's hard to mess up.
But, yes, all the money is in alcohol. People "go eat Mexican" so that they can really get drunk on margaritas (or Corona, Modelo, and Dos Equis). For a lot of people, it seems classier or more socially acceptable than getting drunk in a bar.

I can’t speak for your specific restaurant, but I think people are confusing Mexican food with Tex-Mex
Tex-Mex is easy. Just throw a a bunch of cheese on some marinated beef with tortillas and call it a day.
I didn’t know what Mexican food was until I moved to Texas.
