It's not just being stiffed although that definitely is a huge part. It's all the bs you have to put up with. It's like they have no clue how to eat out like civilized people. Eating 3/4 of their plate and then sending it back because it didn't taste good, was too salty, whatever else. Running the servers go death and treating them like garbage.
When I waited tables it wasn't just white people that didn't want those table, the black servers hated working them too. Stereotypes don't just appear from thin air

Couple of my friends waited tables in college. Said church lunch crowd were awful tippers but essence festival attendees were by far the worst. They knew as soon as they walked in they were about to be run ragged for nothing in return other than being bitched at and complained to.

Yesterday I dropped some people off at a place called Nice Guys on Earhart. Brunch crowd was waiting in line 75 deep out in the heat for them to open at 11:00.
I wouldn’t imagine there are too many more hell on earth table waiting scenarios that being there at opening time

So I know a guy who was "assigned" to Pac Man Jones, Brandon Marshall, and LeSean McCoy last year for Essence fest. Said they tipped him $500 on top of what he was being paid. That was after his 4 hour "assignment". Now, he's not the police, nor is he a waiter. Still, that's not bad after 4 hrs on top of his hourly wage. Said he was pleasantly surprised. I also know that's not the norm.

I waited tables at a nice restaurant in college. I can say from experience that it ain’t worth the bullshite. Nothing is ever right, want free shite, etc.

As the treasurer of a Baptist church for around five years, I can tell you that’s because they’ve already emptied their pockets into the collection plate at church to honor the tithe……NOT!
