The proper way to respond to Flat Earthers is to begin backing away slowly and verbally instruct them to not approach at all. They are insane and mentally unstable and therefore are always a physical danger.

The science is there to refute the magic guy in the sky who is responsible for all life on the planet hypothesis. But, just like "The Three Little Pigs, Jack and the Beanstalk and Mother Goose" is soothing to little kids, go on believing if it brings you comfort.

OR, what if what we observe in the Fossil record IS the way God created the universe and the folks that originally transcribed Genesis lacked the cognitive ability to describe it accurately? If God used slow changes over time to build this world and the universe does it make the account in Genesis any less spectacular? No. In fact, it's the opposite.

In short, people who believe in one conspiracy theory usually believe in multiple/ all conspiracy theories.
For example, their logic is that if the government has been lying to me about one thing (say for instance, the efficacy of a certain vaccine) then every expert of anything must be lying about everything.
It is lazy and flawed thinking, but don't try to tell them that. They're the enlightened one and you're the sheep.

Where some people fail is to think of God in terms of mankind. God is nothing like Man. To God Time has no meaning . To God a few billion of years is of no consequence.
These ‘ flat earthers’ can be dangerous in the spreading of false information, they should go and climb some tall mountains and really look around. Some of them actually do not believe that gravity is a real thing and lately some really dangerous people are questioning the reality of Nuclear Weapons.

I think a lot of these people are trolls, especially online. They don't really believe the nonsense they are spewing, they just want to be different and like to press peoples buttons.
