Close second is grandma's dressing - she bakes some bread and biscuits a few days beforehand and lets them dry out. I don't know what all she puts in there, besides sage and probably a pound of butter. I'll eat that shite for days on end.

This is usually what I make.

Boil some red potatoes in milk, mash em up, add chunks of bacon, garlic, salt, lots of butter, heavy cream, sour cream, black pepper, and a bit of balsamic vinegar.

Cornbread dressing and it isn't even close for me. Depending on where we are for T-giving my mother or my wife's G-mother will make a whole separate batch just for me to take home.

I've grown fond of pancit but I have a bunch of little brown people running around my house during the holidays. We have a "khaki" Thanksgiving and mix the two food types.
