I've been an empty nester since the late 80s. I'll try to run through some of the (expensive) hobbies I've had.
Travel (including European cruises)
Fiction writing (I've published twelve novels)
Astronomy (you just can't own too many telescopes)
Astrophotography (the costly aspect of astronomy)
Restore an antique Porsche 356 (another costly pastime, but I got back more than I had put in when I sold it.)
Date (and despoil) hot chicks (present wife has put a stop to this)
Probably some others but I can't think of right now.

Highly recommend getting e-bikes for you and your wife—Trek or another big-name brand is a safe bet. Once you have them, check out cities with good trail systems.
E-bikes seriously change the game. They flatten hills, extend your range, and make longer rides way more enjoyable. As long as you can keep a decent cadence in a low gear, you can climb just about anything without burning out. Totally worth it.

If you are close to the Smokies (TN side) there are a lot of car clubs. Some are just for driving, others for collecting, and once you collect you'll be into repairs.
There are magnificent older and just plain old trucks and lots of interest in restoration. Most of the guys who do it for fun are good at welcoming newcomers who want to learn.
With the land you have, you might also want to start planting to attract wild turkeys.
Gardening and making your own beer and wine are also possible.

Gunsmithing or forging are things I've considered if I ever get on your level. If you can afford the ammo, having a range would be awesome to practice towards competitive shooting.

Hooking YouTube music or Spotify to an amp and playing bass for hours along with some of the hottest musicians in the 80s and 90s.

Just retired last year. I live on a small farm, always something to do.
Have you considered buying a tractor? Maybe something older if $$ is an issue.
Jeeps are great to get into, there is a huge community out there and just about everyone modifies theirs, whether a Wrangler, Cherokee, etc. A Commando would be super cool. I have an older Wrangler to crawl around the farm on.
I have a couple of older cars that I've owned for a long time that I'm working on, got one running this week. Once I get these going again I have my eye on a 60's Jeep Gladiator truck that's been sitting in the back corner of a repo lot near my house for the last 10 years. It's in rough shape but if I can acquire it, would occupy me for a good while.
Do you like beer, wine or weed? I used to make wine and have friends that enjoy making beer. Since I retired last year started growing weed (more complicated than you might imagine) which is legal to do where I'm at (not that it matters). It's been a great learning process and just plain fun producing something that my older friends/family find helpful.
I mountainbike and cycle the rails-to-trails around here once or twice a week.
Have you tried paddling? Tennessee has good places for either flat or whitewater.
