Maybe we could harvest that Nitrogen to use as plant food.

Not from what I’ve seen. They eat carbs like a motherfricker unless they are into fitness like bodybuilding or CrossFit.

70s - eggs are bad - dont eat them
80s - egg whites are fine, dont eat yolks
90s - eggs are fine cholesterol in food does not affect cholesterol in blood but red meat is bad - heart attack
2000s - meat is fine, what you eat is more about heredity

From an engineering perspective, all of these "crises" are just simple mass and mole balances. We take a mole of something out of the ground or air, we need to put it back in a way that it can be used again. Our current "landfill" model of moving it from one source and dumping it permanently to another is kind of flawed. The same thing will happen with lithium battery waste in a decade or two.
I'm too dumb to know if you're correct but it sounds right.

Milorganite Fertilizer
This problem already has a solution. I use this fertilizer exclusively because I live on the Cahaba River and don't like the idea of chemical fertilizers near the river. It works great btw.

I think that's true in the "losing weight" context. People trying to diet don't eat enough protein (which negatively affects them b/c they don't get full enough and it leads to cheating and failure).
