Right when the other person sits down I say to them "glad we didn't get a female/black pilot" and that usually keeps them from talking to me.

Keep to myself. I have worst luck with the people I sit by. I'd carry on small talk if the person looked to have similar interest, but that's a rarity.

I'm usually keeping an eye on the most fidgety hijack candidate.

I don't talk to anyone in public and rarely talk to my own family members - why in the hell would I talk to strangers on an airplane?

Years ago I was on US Air flight from New Orleans to Pittsburgh. I was sitting next to tall ship black guy in the black suit. I look down and see he's wearing a Superbowl ring. Turns out he was Mel Blount.
He was a talker and a very interesting conversationalist

This. Just enough conversation that it isn't awkward sitting next to someone for hours that you don't say a word to, but also not so much talking that it becomes laborious or prevents you from relaxing and doing your own thing.
