Saw a guy with a golden doodle and know him to be smart and generally playful. Reminded me of the angry guy I know with a complex with an aggressive pitbull.

Probably more of a person attracted to a breed similar to his own personality. But, wondering if dogs take on the personality of their human?

Is someone supposed to give you a straight answer to that? Let me consult a few academic journal articles first.

Yes, they do. My dog is a complete antisocial arsehole just like me. He spent a few days at a doggie camp while we were out of town, and they have an app where you can watch live video of your dog in the play area. I thought he'd be all excited since he hadn't really been around other dogs much and seems pumped whenever he encounters another dog when I walk him. But the little fricker spent the entire weekend sitting in the corner avoiding all the other dogs. It was pretty damn sad, but I was like "Yep, definitely MY dog."

Dogs definitely have their own personalities, but they can pick up the quirks of the people and animals they're around. They learn from others. For example, my SO would often respond with a sarcastic "yeah yeah yeah", so our dog started mimicking it to sass me when I tell her to do something.

A friend's dog was raised alongside cats, so it uses its paws like hands like a cat.

Another dog started picking up that dogs habits after spending a weekend with them.

My wife always said our dog was as hard-headed as me. Wouldn't listen to anyone. He also liked to frick with people and play keep away with sticks, balls, the works...sometimes I like to frick with people by just being a dick and not giving them what they want either.

Then he decided to go all wild and free and ran off. Part of me has always wanted to just disappear into the swamp. That fricker actually did it.

So yes, I think they do. I think the bastards are the living embodiment of everything we want to do, but won't out of fear of the consequences.
