Why has he chosen to do this with his arm extended like that? It looks like he would rip his shoulder out of socket when his full weight gets applied to it.

It's not much of a stunt either.
jumping a football field of cars on a motor bike is a stunt.
Tight roping across the grand canyon or niagara falls is a stunt.
This is more of a science experiment.

I think he has some kind of harness. I don't think he even has to hold on. This would be better if he was sitting in a lawn chair.

Are we supposed to believe he is just holding those and that he doesn't have a harness under that jacket that is tied to the balloons?
I would also assume he has oxygen and a parachute under that jacket.

He's harnessed, but no parachute. There's a parachute above him in the balloons. He'll have to release and climb up to get the chute and clip it to his harness once he gets to 8,000 feet.
