Some plants have hired temp services to find workers - aren’t a lot of takers

Someone I know manages the commercial land for a company. They are building and tearing down shite all the time and every single field worker have temporary visas. I think they work for 6 months, have to go back home for a few weeks, I apply for the temp visa again, go back to work for another 6 months.
But I know two crawfish distributors (also peeling plants) that if you go pass by there tomorrow every worker is Mexican. And the distributors let them bastards deliver crawfish in the company truck (the trucks where they are able to deliver a bunch of sacks at once and have them on ice) all over the place, baton rouge, new orleans, etc and they don't have drivers license.
I remember back in the day... late 80s/ early 90s maybe. My brother worked for a crawfish distributor and he had to bring crawfish to New Orleans on a regular basis. He got another job so he left, but a few months after he left the dude who owned the business got arrested and eventually did some time. He was moving more than crawfish so every time I see a crawfish company vehicle and its a Mexican driving I wonder if they are moving more than crawfish and if the truck ever gets stopped and the cops find the illegal products would the owners just deny knowing anything about the drugs and blame it on the Mexican.

I did spend a year in a cold room, but it was cold and sterile, and looking through a microscope all night. That was bad enough.
I realize that doesn't compare to the stench and manual labor that must come with peeling crawfish. However, if you live in the poor South and are broke, $1250 per week sounds pretty good.

And to add to that, annual farmed raised crawfish harvest in Louisiana today is about 4 times larger (~ 200 million lbs) than it was in the late 80s-mid 90s (~ 50 million lbs) when labor for peeling was primarily Louisiana and Vietnamese residents - hence there is an incredible demand-need for seasonal labor to peel crawfish that aren’t sold for the live market (peeling is seasonal, labor is only needed to peel for 4-5 months).
Mechanical crawfish peeling machinery has been developed and patented over the past 4 decades, but none have been perfected & adopted by the industry.
