It will most likely be a novel bird flu virus like the H1N1 in 1918 that killed 100 million people. H5N1 has been causing havoc in the poultry industry for a couple of decades and has been passed to some people in that field of work. Many have died. However, there hasn’t been any human-to-human transmissions of any significance yet.

It has spread to other food or domestic animals but not to pigs. If that happens, watch out. Pigs are the ideal crucible for a bird flu virus to mutate to a form that can be spread easily between humans.

20+ years ago Ralph & Kakoo's in BTR featured radiation pasteurized raw oysters on the halfshell. I found they quite good but overly expensive. Some processing plant down the bayou had the equipment and was promoting them. R&K was very supportive of La seafood development and often put experimental items of the menu.

Raw oysters contamination is just like lots, perishables. The longer and farther it travels the higher the risk. Not everybody along the chain is careful about temperature regulation or washes their hands after very toilet break.

It’s not the milk, it’s the cows or the process is contaminated somewhere. The reason they started pasteurizing milk is because they thought the milk was making people sick until they figured out the unhealthy cows were the reason. Pasteurizing milk makes it absolutely bereft of any health benefits.

FINALLY!

The contamination occurs during the milking process. The milk is fine. The cows must be clean, the 'buckets', the Milkers etc. Taking milk to 240 degrees for however many minutes killers SO much of the nutrition.

Ever think why they have to ADD Vit D, enrich it, etc?

I bought raw, organic milk from a man for 17 years and fed it to my daughters and drank it myself. Not one single episode of anything related to the milk. I realize this is anecdotal, but he went through the steps to make sure the transfer process was sanitary.
