and like others have said, lack of moving around. our grandparents and some of our parents would work with their hands in the elements all day and eat whatever they wanted and look fine. now we sit and play video games and sit at a cube all day. sad
its not carbs that make you fat, its an excess of calories over what you need that makes you fat
some of the highest carb eating countries have the lowest BMI and longest life expectancies. Asian countries, etc

They didn't drive sugar into EVERYTHING back then.
Also, portion sizes were generally smaller and there were less sedentary jobs.

the "low fat" movement of the 80s/90s created an avenue to PACK those low fat foods with sugar

Meal choices in general were so much different. A soda shop was like going to the ice cream shop. It was a candy, not a beverage to be served with every meal. Same thing with fast food, it was a treat for every once in a while. Now half of America treats it like a cornerstone of the food pyramid and wash it down with a bucket of Dr. Pepper. I admit to being that way. We start each grocery trip in the fruits and vegetables area and barely spend any time there. Not enough time to prepare good meals (there is, but we don't make the time). We will no doubt eat at least one fast food meal a week. That's terrible.
My grandmother and grandfather met in college. Grandpa got his ag degree, grandmother got a HOMEMAKER DEGREE (not sure the actual title)!!! It was like college level home-ec. She cooked for 7 children and all the farm hands. She got up at 4 when my grandpa did and started breakfast, then switched to lunch, then dinner. They got good meals every day and seriously doubt they had takeout ever. Takes a lot of work to do that when both work full time, even with less kids. Therefore, terrible eating habits. I couldn't imagine meeting a woman getting a degree like that now.
I combat my poor choices with physical activity.

Let me answer with myself as a test subject.
Last 10 years:
Drank 6-8 diet sodas a day.
Ate fast food 3-4 times a week.
Never cooked food just used microwave.
Ate dessert with lunch and dinner.
Sat behind a desk all day.
Result? Gained 44 pounds of pure fat despite running 3-5 miles a day
Last 3 months:
Stopped all diet sodas and only drink water.
Have not eaten a single dessert.
Cooked every meal at home using chicken, beef and vegetables.
Avoided all sugar whenever possible.
Result? Despite not counting calories or increasing my activity level, I have lost 30lbs. I have not even felt the least bit hungry. Without all the sugar, my body does not crave food all night like before. It is amazing.
Conclusion? The food they are selling us is slowly poisoning us.
