Buying crawfish in Texas, what the hell is this?

I guess some of it they say is pre-washed, which I suppose is a Texas version of purging?

Most Louisiana places use Select/Jumbo, Field Run, or Medium. I have no idea why Boyd’s would use so many options. That would get confusing.

I’ve been in Texas almost 30 years, buying sacks of crawfish every year. I usually buy either from Crosby or the Kemah/Seabrook area.
I have NEVER heard of or experienced what you are describing.
Any chance you had a very narrow experience and assumed it must be that way throughout the Great State of Texas?

I haven’t bought anything yet, will be in Galveston this weekend and doing a boil and started looking around for places to get live crawfish. That’s when I ran into this seemingly grading system.
ETA that Boyd is in Texas City, seems like about the closest place to pick them up.
