Instrument tech, industrial electronics/plc, hydraulics, robotics tech.

Eta: If he is set on being a welder don't go to school, get in an apprenticeship with either the pipefitters, boilermakers, or ironworkers.

Summertime HVAC work in attics? Plumbing would be easier...

all that being said, with the new PVC tubing, installation and repair has become a lot easier...

Electrician, pipe fitter for sprinkler systems, sheet metal worker for HVAC, all of those make damn good money.

Appliance repair. Make more or similar to hvac without having to work outside. Unlicensed field. No regulation other than EPA license which you don't need anyway because we really only use r134a which anyone can buy. Low insurance and the old fricks refuse to work on the newer stuff so we need technicians who only know the new stuff. Not boomers stuck in their pre computer ways.

Anything. A young man with a work ethic, and a willingness to work, will have a nice lifestyle.

Does he have any desire to be self-employed one day? If so, I would recommend he take a basic bookkeeping course or two along the way. If he does that, learns his trade, works for someone else for 7 or 8 years, and starts his own company, he can make a fortune.

Auto Mechanic, HVAC and plumber. Are all major needs right now.

I think plumber is probably long term best option to go into business for yourself.

Fiber Optic Splicer
Welding - Especially air tight, water tight etc.
Elevator/Escalator Mechanic - Sleeper choice
HVAC - We will NEVER have less HVAC
Diesel Mechanic - In the shop or in the field
Electrical
Plumbing
Auto Body/Paint - Most jobs are paid by insurance
Boat Motor or ATV Mechanic - People love to spend money on their toys
Auto Mechanic
Appliance Repair - Easy to get into

Ranked in order of possible income.

All of these jobs you can start working for someone else and then go out on your own.

My sister owns several trade schools. HVAC is great, Truck driver is really the place to get into right now, but you are away a lot. Unless you can get semi local routes. If he's a white guy with a personality and can move to a wealthy suburb, being a barber is not that bad if you can find the right shop with an opening.
