Umm, yes.

A "wine pairing" will not make the meal

No, but it can enhance it.

I can't sit here and pretend to have the palette that can discern all of these nuanced differences in a wine made from a western facing hillside vs. a northern facing hillside. But a decent pinot makes a good steak better, and vice versa.

Think that all you want. But it's actually science. The way the carbonation in the beer interacts with the food on your tongue and the way the flavors compliment or contrast each other is proven to be a way to enhance both the food and the beer.

But I'm sure you're right.

Who determines what is complimentary? People have different taste buds. I hate ketchup but others like ketchup, for example

OP, I don't think you could be more wrong. There are so many different types of beer and wine and some absolutely go better with certain foods than others.

It absolutely can make a difference.

If you wanted to argue the placebo effect of wine: ie that knowing a wine costs more makes it taste better, and that it is extremely difficult to discern why a wine is more expensive than another, I get that.

But certain wines do interact differently with different foods. I mean, that is a fact.

I'm really not sure why I'm wasting my time with the likes of you though.

That isn't how it works. While taste buds are different, the vast majority of people are going to taste things "the same".

A sommelier will know in general what to pair with something.

Or, you know, you could try different combinations and find what you like. There are general rules for things, but not everything works for everyone.

Meals at high end restaurants are going to be prepared to specifically compliment particular times.

There are many things that people enjoy that you don't like.

Maybe let others enjoy them and you enjoy what you like?

Or, you could think to yourself "Self, lots of other people like this and say this is a thing. Instead of me unilaterally deciding its stupid without trying it, maybe I should look into it and try it a few times myself."

You've obviously never sat on a patio on a warm spring day and enjoyed a plate of prosciutto or porchetta with a high quality, traditional Lambrusco

That you don't like coffee doesn't mean that coffee and donuts don't go together. It just means you don't like coffee.

You seem to have an inability to understand simple concepts.

Can't say I have, I decide to spend my hard earned money on productive things instead of throwing it away on nasty wine and expensive food.
