Apu is one of the more lovable and kindhearted characters in the whole show. I don't feel like The Simpsons ever tried to make it seem like an Indian immigrant couldn't amount to more than being a gas station clerk. It's just that there are many, many of them.
The outrage is just because a white man does the voice. Nevermind the fact that most Indians are told that immigrating to the US and opening gas stations/convenient stores is a good, safe idea. Just like Middle Easterners believe driving cabs is a safe job in the US.

Apu is a stereotype but he's not offensive IMO. Maybe they just tone him down or do an episode that humanizes him a bit.

This country is wound up so fricking tight, if it’s not careful it will PC itself out of actually living a life. I find these people who get upset at shite like this to pretty much be those to avoid in life and your own life gets significantly more improved.
