Worked there as a teenager in the late 70's early 80's. The "Meat" truck came every other day as W-2 was a high volume location. The meat was in plastic bags that fit inside a milk crate, never frozen, and was formed into square patty's usually twice to three times a day. The patty making machine would have to have the meat fed into the top, and would press out the square patty's in 1/4 lb forms. The chicken was also fresh, never frozen and fried in a "Henny Penny", a rather large high pressure type deep fryer, in batches of no greater than 12 breasts at a time.

Tid bit for you, the meat for each burger ordered came directly off the grill and onto the bun, and any meat that was overcooked, was then boiled later on that day to remove the grease, chopped fine and added to the chili.

Yep, boiled, grease drained off and chopped fine, back in the early 80's.

I don't get why this mortifies people. Seems like a good use of product.

This is true. My Uncle managed a Wendy's. Meat is not frozen either.

Exactly, the meat was never old, just cooked and boiled, and added to their chili the next day. I know I could still make that chili today with my eyes closed.

I worked for Wendy's in the early 80s. Fresh never frozen then. Delivered to each store daily

And here I've been thinking that 32 degrees was the freezing temp my whole life.

I was mortified to learn why taco night always followed spaghetti night on my submarine

The cooks would wash the spaghetti sauce off the meat and combine it into fresh meat for tacos the next day.
