People celebrate Jesus's birthday in December even though all the scholars agree it wasn't. So any day she would pick would be just as valid as Dec 25 is for Jesus

Dude needs to hire some help in the kitchen.
That owner needs to go ahead and make them a cake. I would make one of the worst tasting things ever eaten. I would substitute cayenne pepper for flour, like no flour. Or I would only decorate cakes in a fashion that I liked. I would photograph them and list prices. If you want any customization to any cake the charge could be as much as $10,000.
You want a cake of satan licking a dildo? Sure Its $10,000. And $9,500 would go towards a charity of the bakers choice, hopefully a charity that offends the a-hole customer.

Even if he baked her a legit cake fulfilling her wishes then he opens himself up the liability that she will claim it made her violently ill and now she is a straight man again.

You are 100 percent correct. But nothing fires up the church like claiming religious freedom is being violated. Gets more attention that way.
