My understanding is that accrued vacation is compensation just like your salary, and this would be enforceable under federal regulations.

If you are in Louisiana, not paying out vacation pay can be a problem for an employer.

You are mistaken. There is no federal "vacation" law that applies to private employers.

This is a correct statement.
The Court of Appeals in Alabama has ruled that offered vacation time is a form of compensation for services and that once the services are rendered, the right to the promised compensation is vested just as are wages or other forms of compensation.

It can be set out in your employment contract whether accrued vacation is payable upon separation. Generally, if there is no official policy and time is accrued its going to be required to be paid out. So, unless there is specific policy in your contract that it's not going to be paid out, you'll get paid for the time you accrued and haven't taken upon separation.

I had this happen, got an extra paycheck, didn't notice it at the time as I wasn't monitoring the bank account closely.
Anyway, they took it back out of my account a few weeks later without saying anything, I noticed it that time because I had moved money and it depleted the account.

I was paid for three additional weeks from the first employer I worked for out of college after I left them. They never came back asking for it and that’s been 10 years ago.

The best answer is put it in a savings account and don't touch it. If they come back for it, you'll have it and can plead ignorance. If they don't come back for it in a full calendar year, their books are closed and they aren't coming for it.

A lot of employers are switching to a PTO Bucket. It's paid time off whether it's vacation, sick, or personal time.
And most of them frontload it to the beginning of the year, where it's not enforceable to be paid out upon termination because it wasn't "accrued" in the traditional sense
