I was trying to think of any of my favorite bands whos best album is actually not one of their 1st two albums. I cant think of many.
The Black Keys were the 1st ones to jump in my mind. I think their 3rd (Rubber Factory) and their 7th (Brothers) are better than their 1st two.
The National was another. I prefer their 4th, 5th, and 6th over their 1st three.
Avett Brothers are definitely one. I like a number of their albums better than their 1st two.
It's a little easier to do if they have a large catalog, but if the artist only has 3-4 albums, it doesnt happen too often.

Bon Jovi. I liked the first 2 albums, but Slippery When Wet was better.

Mötley Crue’s “Dr. Feelgood” was their 5th album and went to #1 on the charts in 1989.

This for me.
I'm an Everclear fan and So Much For The Afterglow (3rd) is their best.
Big Gaslight Anthem fan and The 59 Sound is their 3rd if you count the Senor and the Queen EP. Their best, IMO.
Outkast, Aquemini (3rd).
It's a matter of taste as to your favorite album, but Springsteen and the E Street Band give you everything from Born to Run onwards.

The majority of great artists peak past their 3rd album. I can name more who have done so at about the five-year mark then those who haven’t:
Pink Floyd
Beatles
Rolling Stones
Led Zeppelin
The Who
Rush
Bob Dylan
AC/DC
Pantera
Slayer
Megadeth
David Bowie

Rust in Peace is a great example too.

- tool

- beastie boys (paul's boutique is a landmark album, but i wouldn't say the bboys "peaked" with that one)
- the white stripes

There’s good reason why this is fairly rare:
You have your whole life to write your first album, and no more than two years to write each sunsequent album. Your first album typically has the best songs you’ve written. The second one has the good ones that didn’t quite make it on the first album. By the third album, a band is mostly relying on music written between recording sessions. Nearly all of the songs placed on that third album were written in the 2 years prior to its release. That pressure to produce often doesn’t result in the best music going forward, but sometimes bands strike gold under pressure.
For example, Ocean Avenue was Yellowcard’s 3rd album.

I can think of a bunch. Just off the top of my head:
The Beatles
Bob Dylan
The Kinks
The Rolling Stones
Animal Collecitve
Built to Spill
The Smiths
The National
Guided By Voices
Wilco
The War on Drugs
The Flaming Lips
Of Montreal
The Clash
Radiohead
Talking Heads
Yo La Tengo
On the other hand, I could also list a bunch of bands where I feel the best album was the first or second.
