If by the HBO treatment, you mean stories not filtered and sanitized to remove offensive matter, and given the budget to create a believable setting and tell the story over 50+ hours, then I'd say: I'm a big fan of early 20th century pulp fiction, and some of those would be fantastic (pardon the pun).

ERB's John Carter series would be epic if done right. I know they made a Pixar/Disney film that failed (although it was actually quite fun), but that was very watered down. Remember, JC was the subject of various Vallejo paintings, and if you stick close to that, it would be great.

Another that could be interesting would be the 'original' Buck Rogers story, Armageddon 2419. That, ironically, got cleaned up early on by the comic strips, while the original story was much different.

But, it would be really dependent on the Elric casting. It would have to be a home run casting on the order of Gandolfini as Tony Soprano.

But, we could get 6 or 7 great seasons of dark, gritty, swords and sorcery. Dark shite (for it's day), but really solid storytelling.

The Running Man mini-series. 10 episodes. Pull directly from the book so we can erase the Arnold movie from our national psyche. The book was awesome.

Every time I hear about it getting adapted I get worried.

IF done right it would be incredible, but it would require such an incredible budget to do it correctly. Idk if anyone would ever green light the budget it needs from day one, and if it doesn't get that then it'll come off as super wonky.

Turn Tom Clancy’s “Red Storm Rising” into a 5 episode limited series.

It’s a fictional story set in the 80’s. USSR sets out to conquer Western Europe. Lots of great storylines

You can also make a series out of

Debt of Honor, Executive Orders, and The Bear and The Dragon

For me, Dune.

I'm excited for the upcoming Villeneuve film, but I feel to do the original book series true justice you'd need a series. With a series you can tell the full story without tons of exposition, and you could easily get six seasons from Dune through Chapterhouse, perhaps more.

Hitman or Transmetropolitan

Both were Vertigo (DC) titles from the mid-90s. Contemporaries of Preacher.

And like Preacher, Hitman was written by Garth Ennis.

Harry Turtledove's Worldwar series set in WW2. There's so much going on and so many different story threads in those books that it could never be a movie. Only a series like that given enough time would have a shot at covering it, and even then it would be a challenge.
