I tend to dislike superhero films and prefer stories about real human beings bravely dealing with unusual circumstances. I am also fascinated by such real life stories set in WWII. Despite the title, this would make an interesting film:
Dutch Girl , the story of a Edda van Heemstra, a young girl living in Arnhem (and a nearby burb) during the Nazi occupation and famous battle. Her uncle was once the mayor, and along with others was executed by the SS in retaliation for acts of sabotage by the underground, which included her brother and later herself. Her family sheltered British airborne survivors after the famous battle and helped get them smuggled out to the Allies. She helped a British bomber crewman who later spent 3 years as a prisoner of war, and kept his family signet ring on a chain around her neck until going to England to return it to him in 1947. Only at the end of the film should it be revealed that the girl Edda was later to be known to the world as Audrey Hepburn, future winner of Academy, Emmy, Grammy, and Tony Awards.

You picked two fantastic book to listen to to start
These are two of my favorite narrators and both of these are fantastic stories/audible experiences.

If executed very carefully, with an emphasis on not trying to exactly reproduce the story detail-by-detail, then I think Barbara Hambly's Darwath trilogy/universe could make a great series. Would need some production investment, and some strong guidance to avoid some of the pitfalls currently dragging otherwise potentially decent ideas down into oblivion.
It's tricky though. I could easily see it flopping even if done well. But if it is done well, it could be brilliant.

Haha i mean foundation had to stray far off the books and still has made a great show. As you said its all in the execution

Hail Mary is the only book I insist people listen to instead of read. You can’t go wrong with Reynolds narration of the Red Rising series though.
Some other audiobooks I’ve enjoyed are:
Murderbot
Bobiverse (same narrator as Hail Mary)
First Law series
For those with Spotify Premium accounts, you are credited 15 hours of audiobook listening per month. I would check there before spending an audible credit, especially for Murderbot. The books are too short to use a credit and you have enough hours to listen to the first four books in one month.

That said, there are a good 3-5 tales from Tolkien's The Silmarillion that could be excellent standalone movies or premium series, if you give them the respect they're due. Any of which would be a better TOPIC than Rings of Power, War of the Rohirrim, or The Hunt For Gollum.
Granted, Rings of Power did choose an epic tale, but there was little actual writing about it, and far too much time compression (no matter how well they could have done). They're trying to shove two thousand years into a couple seasons.

I'm a fantasy book guy and there are plenty I would love to see

In a former life, I was a avid reader and read every single RA Salvatore novel that involved Drizzt.
There are so many various storylines that I think would be awesome to see on screen. The Dark Elf Trilogy, Icewind Dale Trilogy and The Transitions Trilogy being my favorite.
Artemis Entreri would be pretty cool as well

Eyes Of The Dragon by Stephen King comes to mind.
It’s an oddball out of his works in that it is a medieval fantasy rather than a modern horror. Flagg is a character, so it kind of runs parallel to Dark Tower, The Stand, and some other works where he is the big bad.

Agreed, but they've been talking about it for at least 15 years now. I'm incredibly doubtful it ever gets made. I'm not sure if they're hung up on how to handle the dual storylines or what, but there's clearly something that they're having a hard time with
