Hate to say it, but Meryl Streep has pulled off drama, romance, comedy, fantasy, historical period pieces and even musicals. She's played leads and supporting roles, heroines and villains.
I don't recall any horror, sci-fi or action roles tho.

Yes to all 3 you mentioned. When an actor can get you to have huge emotional swings to a character they are portraying, they are nailing their job.
I'll toss in Sean Penn and Gary Oldman on the list of talented males.
For the female side, Meryl Streep, Kathy Bates, Viola Davis and Marisa Tomei.
