Adam Sandler. He seems like the simplest, most honest actor out there.
He’s been reported to randomly stop by local gyms/parks from time to time to play pickup basketball games with the normal folk

Every interview of Vince Vaughn that I've seen, I've come away thinking that he seems like a really nice and thoughtful person.

Josh Brolin hasn't had many roles where he has played a "loveable" character, but I've seen a couple of interviews with him after I saw him on the Hot Ones show and he seems like a really cool, laid back giy you could sit and shoot the breeze with while drinking a beer.

James Garner seems like he fits the bill. And my father can confirm, he had breakfast with James Garner in Hawaii when the breakfast buffet tables were crowded. He was a super nice guy.

I've only heard good things about John Candy.

My aunt (no pics) had a bit part in the recent Bill and Ted movie. She has been doing extra/bit work in locally filmed stuff since the 1980's and has met a lot of stars. She said Keanu Reeves was the nicest, most genuine of all.
