Interesting people are saying Game of Thrones or LOST Knowing how those shows ended up, you’d just be sitting yourself up for massive disappointment again.

I'm torn on this one. I could see with going, perhaps, with either DS9 or Babylon 5. On the other hand, I could also see The Sopranos, The Wire or Breaking Bad.
But, I've re-watched all those shows and "having seen it" doesn't detract. Because of the lore of the show, the one that "having seen it" might reduce future enjoyment might be Lost. I haven't yet re-watched Lost.

No question the early seasons were epic. But anyone who tries to sell that they were fine with how it all ended... well, that'd put them into a very small minority.
