How to Introduce/Watch the MCU

My gf loved the Dark Knight trilogy, and now she wants to get into the MCU. She doesn't know squat about comic books beyond the Dark Knight movies, but I've seen all of the Marvel films to this date.
In what order should I show her the MCU movies? Are there any I should leave out for a mainstream/casual viewer like her?
Just wanted to get y'alls thoughts, as a project like this is pretty exciting/overwhelming. It really is amazing how they've created this universe of 18+ movies that all fit together...

I'd just go with the order the films are released.

And pepper some Agents of SHIELD in there as well.
At some point introduce her to Jessica Jones (Netflix) as well

Start at Iron Man and watch them all in order

I would alternate order slightly:
Captain America: First Avenger
The Incredible Hulk
then go to Iron Man and watch in order from there

Or skip these pieces of shite all together.

If you're looking to save time, Hulk is skippable.
Cap to Iron Man is probably the best start.

Cap 1 is hardly a "piece of shite." Incredible Hulk is definitely in the lower tier of the MCU, but the historical background (real history and MCU history) alone makes Cap 1 worth watching to me.

plus Red Skull is one of the better villains in the MCU

Skip Hulk 2008 and Thor 2, you'll thank me later.

Definitely skip Hulk.
While Thor 2 is one of the worst MCU films, if you like Loki, then it's a good one to watch to see his development in it. I'd say that movie was more about Loki than Thor.
To be honest, you could really just start with the first Avengers movie, skip IM3 and Thor 2, and then start with CA:TWS and follow suit after that if you're just trying to get ready for Infinity Wars.

Watch in the order of release and decide for yourselves what you think is good.

Also, I would bring in Guardian's a bit earlier - it doesn't tie to anything until the next Avengers movie and since its one of the better movies, I'd rather get it in early while she's interested than hold it in reserve.

I'm assuming she wants to skip some because she doesn't wat to have homework and a forced slog of 30 hours or so of movies. So, pair it down...
Iron Man
Captain America: First Avenger
(skip the rest of Phase 1)
THE AVENGERS
Iron Man 3 (you sort of need his PTSD storyline)
Captain America: Winter Soldier
AVENGERS: ULTRON
Guardians of the Galaxy
Ant-Man (not essential, just fun)
CAPTAIN AMERICA: CIVIL WAR
Thor Ragnarok
Spider-man: Homecoming (again, not essential, just fun)
Black Panther
That's still 12 movies. The super paired down version is just the capitalized ones and then picking up your favorite characters. You can drop Ant-Man and Spider-Man, but why would you? Those two movies are delightful. And they are nice palate cleansers.

That's cute, but no.
Additionally, First Avenger is the one of best representations, along with Superman and The Rocketeer, we have of the Silver Age of Comics purely on film.

I think you kind of need Dr. Strange, as i think he will have a central theme in Infinity Wars.
Same with GOTG, so you understand who Peter Quill actually is since he's not just a regular human.

If she's never seen them, then my suggestion is this:
go back and review the post-credit easter eggs in each film. Line them up in order so that each easter egg leads to the next film. You can skip Hulk.
If I remember, it goes like this:
IM
IM2- that shows Thor's hammer, "we've found it".
Thor- that ends with Dr Selvig looking at the Tesseract (leads to Cap 1)
Cap 1- for best effect, should be viewed after Thor. We saw the Tesseract hinted at already, so we now get an explanation of it. It was stored in something with Asgaardian symbols (Yggdrasil I believe), which wouldn't make sense to her, until after she sees Thor. So that's an early tie in to Thor.
We then later see the shield, which Tony had in IM 2. That will remind her of that scene and Coulson being excited.
Ends with Cap being revived, the team being planned.
Avengers next. Skipping Hulk is ok, because of the conversation Cap had with Coulson about Banner attempting to copy the serum. Widow's fear of Banner (when she's such a badass) is also a great lead-in. That makes Banner's change so cool.
Thanos is the end scene, so...
GOTG next. Explains Thanos more, introduces the Infinity stones.
Thor 2
Cap Winter Soldier
IM 3.
Thor 2 has more stones and sets Loki up as "Odin"; Winter Soldier shows the collapse of Shield as a controlling entity (frees the Avengers up on their own); IM 3 shows Tony's obsession with building a better defense system without Shield. "Mandarin" attacking without a Shield response only makes sense if you watch in this order.
Avengers Ultron.
Ant Man
Civil War
-Spiderman
Dr Strange
Ragnarok
Haven't seen BP, don't know if you need to, but after Civil War obviously. Not sure if it has to be after Ragnarok.
GOTG 2- I'd say watch that after Ragnarok, honestly. This brings Nebula back with the "I will kill Thanos" thing, and ends with Thor getting picked up by the team. Possibly huge hint of Adam Warlock.
