Honestly if you're a king, pretty smart move to knight Brienne. You get a capable knight, but you only have to pay them 80% of what other knights make.

Jorah had pointedly left his family sword since he had basically dishonored his family. That's why Jeor had it at the Wall.
If he was honorable, it would be against his honor to take it back when his father gifted it to another person.
Sam's sword isn't a gift; it is merely a loan for the battle (at least, that is how it seemed to be intended).
