Did the Empire just immediately crumble in Return of the Jedi?

What happened to all those Stormtroopers, Officers, and gear scattered around the Galaxy? Did no one in that organization try to step into the power vacuum left after ROTJ?
As you can see, I have never read any of the books or theory.

Battle of Jakku was the final nail in the coffin for the empire.

Admiral Thrawn took over the remaining forces of the Empire, and fought the rebels. Until Disney decided that those books were no longer canon.

In the extended universe? No. It was the end of the emperor, but the emperial forces remained. Much like Alexander the Great's Empire after his death, generals and governors split the empire up. Once, Grand Admiral Thrawn united most of the remnents and nearly defeated the fledgling republic, which was notoriously fragile and unstable. The war between the republic and imperial remnants lasted for decades before an uneasy truce was entered into prior to the events in episode VII. Basically, by then, the various factions are technically at peace, but each supporting a proxy war in the contested areas.
Short answer: no, war raged for decades resulting in an unstable republic that could never afford garbage cleanup.

Someone hasn't seen Episode VII

Those assholes were too busy dancing with Ewoks that they never noticed the Empire was reconsituting itself.

The First Order pretty much is the remnants in the new movies. Others have already described the books' post-ROTJ plot

The Empire inexplicably changed its name to the First Order and tripled down on the dumb arse Death Star idea except this time with a whole damn planet.

How is that a dumbass idea? It worked.
If you had the money, labor, and means to build weapons that could destroy entire planets at once, why wouldn't you?
Yes, the resistance destroyed the weapons, but not before they destroyed multiple planets

Randal: So they build another Death Star, right?
Dante: Yeah.
Randal: Now the first one they built was completed and fully operational before the Rebels destroyed it.
Dante: Luke blew it up. Give credit where it's due.
Randal:And the second one was still being built when they blew it up.
Dante: Compliments of Lando Calrissian.
Randal: Something just never sat right with me the second time they destroyed it. I could never put my finger on it-something just wasn't right.
Dante: And you figured it out?
Randal: Well, the thing is, the first Death Star was manned by the Imperial army-storm troopers, dignitaries- the only people onboard were Imperials.
Dante: Basically.
Randal: So when they blew it up, no prob. Evil is punished.
Dante: And the second time around...?
Randal: The second time around, it wasn't even finished yet. They were still under construction.
Dante: So?
Randal: A construction job of that magnitude would require a helluva lot more manpower than the Imperial army had to offer. I'll bet there were independent contractors working on that thing: plumbers, aluminum siders, roofers.
Dante: Not just Imperials, is what you're getting at.
Randal: Exactly. In order to get it built quickly and quietly they'd hire anybody who could do the job. Do you think the average storm trooper knows how to install a toilet main? All they know is killing and white uniforms.
Dante: All right, so even if independent contractors are working on the Death Star, why are you uneasy with its destruction?
Randal: All those innocent contractors hired to do a job were killed- casualties of a war they had nothing to do with. (notices Dante's confusion) All right, look-you're a roofer, and some juicy government contract comes your way; you got the wife and kids and the two-story in suburbia-this is a government contract, which means all sorts of benefits. All of a sudden these left-wing militants blast you with lasers and wipe out everyone within a three-mile radius. You didn't ask for that. You have no personal politics. You're just trying to scrape out a living.

Just goes to show that the Empire was actually the good guys in these movies. The Empire did nothing wrong. They brought stability and order to the galaxy. The terrorist rebels brought lasting civil war and death.

Maybe it wasn't as bad as living in Nazi Germany (despite what Disney continues to attempt to portray) or North Korea, but I think it at least comparable to the USSR or Communist China.
Basically as long as you didn't speak out against the Empire, you were pretty much left alone unless the Empire wanted something from you and then they could pretty much take whatever they wanted without any recourse.

Sounds like we have rebel sympathiser scum here. Consider your source of information is from the biased fake news perspective of said rebel scum. It's easy to take things out of context and criticize the police actions taken to protect the rest of us when you yourself have no better solutions to the threats to order and stability that the empire protected its people from.

I gotta say, in spite of the various numbers on the Star Wars saga, because they came out in various out of sequence triplet forms, and with that one added one (Rogue One), I am having trouble with any kind of mental time-line as to what fits in where. I will need to watch the entire thing in order to "get" it.

If you really want to know what happened, read Aftermath and Bloodline. There may be other books between episodes 6 and 7, but I haven't gotten to them yet.

You left out the best part of that quote. When the contractor shows up.

I'd wager they built the Death Star using more droids than people. With advanced animatronics like C3-P0 why should any uber rich entity employ more humans than needed?

Snoke, Hux, and the First Order.
I find your lack of seeing TFA disturbing.
