O'Toole is one of my all time favorites. So many of his movies are in my list of favorites: Beckett, My Favorite Year...he was awesome.
It blows my mind that the part was originally offered to Marlon Brando and that Albert Finney was originally cast the lead. As things worked out, O'Toole was the perfect choice for the role.

Ellen Burstyn - Requiem for a Dream - I think it's the most vulnerable performance ever put on film. She was robbed of the Oscar.

Robert De Niro - Raging Bull
The "I heard some things Joey" scene is the finest example of acting in American cinema history imo.
There is exist no Shakespearian soliloquy delivered by Olivier that will ever impress me as much as that scene.
A couple other mentions:
Walter Huston- The Treasure of the Sierra Madre
Gene Hackman- The Chamber
I think Daniel Day Lewis's performances in My Left Foot, Gangs of New York and There will be Blood are the finest consistent performances in such a short stretch of time by any actor.
