Lots of good ones mentioned already. I'll add:

The Maltese Falcon
The Third Man
Memento
Blue Velvet

The Asphalt Jungle, The Killing,... anything with Sterling Hayden

For neo-noir, LA Confidential and Chinatown are essentially perfect films.

Dead Men Don't Wear Plaid.

Underrated Steve Martin film noir comedy with a lot of clips from the classics.

Gorky Park has a noir feel to it in an 80's setting. Dark gritty movie with a good detective.

Though not your typical classic noir, Blade Runner is science fiction noir. Big reason why it's one of the best ever made. Dark City is another unconventional noir.

If you're looking for a series, check out Bosch. All 3 seasons on Amazon.

A lighter noir, but another series I highly recommend is Terriers. My favorite show to be canceled after just one great season. It's on Netflix.

Great prison flick.

I'll add:

Scarlet Street
Dark Passage
Strange Love of Martha Ivers
Detour
