I don’t doubt that that’s true, but a lot of this isn’t necessarily soccer itself, just the intrigue of the brief worldwide phenomenon of the World Cup that happens once every four years and happens to be mostly on U.S. soil this year.
I even watched a bit of the U.S. match the other night, and I fricking hate soccer. I do want the U.S. to do well, though.
It’s kind of like swimming at the Olympics. Everyone watches Michael Phelps win all the gold medals when those five interlocked rings are in the background, but when they’re not, he could set an inhuman record a speedboat couldn’t match and no one would be watching or give a frick.

Nielsen has surveyors that wear a digital device that tracks viewership based on sound.
They also take data from digital providers like YoutubeTV. So if your account watched all 3 group stage games on multiple TVs but didn’t watch the first knockout round, they can say with near certainty that you and your family watched it - just elsewhere.
