Confite chicken wings, brined 12 hours before. Cooked in fat 4 hours at 200 degrees. Then cooled. Prior to serving flashed fried at 375 to 400 degrees to crips the skin.

Ribeyes, jalapeño and cheddar smoked sausage, asparagus, twice baked potato’s, and Weller full proof. Chocolate cake for dessert.

Even though it’s early and still hot, my kids requested a homemade gumbo and potato salad , and eating ‘winter food’ in the AC at 8 pm doesn’t bother me. So I’m making what they want lol

I made jambalaya for Clemson game. It is going to be in the 60’s and a dreary, rainy day up here outside Chicago, and I am in the mood for some red beans and rice, so that is what I’m having. And some Abita Amber in my stadium cup from when I was in school there during the Arnsparger years

Redbeans with onions and bell peppers, seasoned with crushed red pepper, whole coriander seeds, caraway seeds, salt, capers and lime juice, served over enhanced basmati rice.

Then cooking some wings and going to do a lemon pepper butter & do some in some Cola BBQ sauce
