It is a commission based deal with a minimum payment if commission levels are not reached. minimum payment is around 2.5M. If sales are higher, then LSU will get more than this. Prior company paid 2.9M - 3.1M commissions each of the last 3 years. Loss of a home game and loss of country fest will certainly hurt sales and LSU commissions, but so does crappy operations and leaving $$ on the table.

They were out of hamburgers at the basketball game about 4 minutes into the first half and the gumbo nachos were pretty much cold. It's disappointing to say the least. Also the workers are worse than fast food workers.

I will be emailing someone at LSU about how horrible concessions are. How about this - if you are competing for my time and money - how about doing something right? Scoreboards, music, long arse lines for food / drink and once you get it it is horrible.

@GeorgeWest: This is correct. At football games the majority of the concession stands are ran by volunteers some made up of high school students or organizations. I know a coach whose volunteers for their high school basketball team at the stadium and has done so for years.
While Aramark owns the rights to the concessions, these stands are ran by mostly high school students. One of the coaches told me how unorganized some things are because some of the staff Aramark employs to supervise the stands aren't always on the same page or aware of what's going on which is management's fault for not preparing them.
You also have to deal with groups that dont cooperate with the supervisors and makes it difficult for them to do their jobs effectively.
They have a lot to work on, and I hope they figure it out ASAP. Sadly, I think they're just making it up as they go. If this continues, I guarantee someone will be fired after this.

I experienced some of the lines sitting in the NEZ this past game. My normal seats are on the East side half way up. Very small lines and the stand by my seats is great.

This always seemed to be the case, but it doesn't seem to be that way this season.
Previously you had younger kids working, with what seemed like parents supervising. They were usually polite and, for the most part had some sort of system in place, to allow things to run as smoothly as possible.
This season it has been mostly "adults." Don't appear to be part of any organization. Rather, lowly paid employees who could give a shite less about anything at all.

It used to be acceptable for service to be a little slow at times because hey, it's kids from troop 45 or whatever and their parents running the show as volunteers. Which I thought was great, helps get the community involved and all that. Now it's lazy arse workers who are literally worse than what you'd find at McDonald's. And they don't have a good attitude either. I don't know if there's anything that drives me up the wall more than ordering overpriced, underwhelming food and on top of that the workers have shitty attitudes. It's ridiculous. I've stopped buying concessions at LSU sporting events.

I know who you are referring to then. That's Global Concessions. That company is also contracted through LSU to assist in concessions with the athletic department. They also assist with some of the Saints games as well. But yeah, most of them are adults as well and don't really care either. That's also another group that's had problems in the past especially with their employees. I recommend contacting Mr. Larry Wallace with your concerns and complaints to ensure that changes are made.

Terrible. My 2yr old son and I went to stand in line with 3 minutes left in 2nd quarter and didn't get back to our seats until players returned for the 3rd quarter. We got a pizza, that's it....and missed the bomb arse half time show

Tons of low quality temp workers from global staffing out of Nola. Aramark ran off most of the good non profit groups.

Yeah because of changes in policy from Compass Group to Aramark. In a few years, it will be mostly temp groups, Aramark staff and a few non profit groups. That's sad too.

I'd take a bunch of 12 year olds with their moms working behind them. The kids are at least excited to be there, move faster, and would certainly be better at math.

I bought a sausage dog from the concessions and swiped my card, then the idiot behind the register added the next guy's order to mine and it changed the amount my card had swiped for. I told her to fix it and she acted like it didnt happen, then I told her to get a manager. The manager turned around and said it didnt happen, without even knowing what happened. I sat there and held up the line and they started taking orders around me, so I said frick it and left. Sure enough, I paid $20 for a fricking sausage dog
