What beef do you buy from Costco

I eat a lot of beef but want to shrink my grocery bill. No more ribeyes. I've been buying the chuck roasts ($7.49/lb) and putting them in the crock pot and that works pretty well for something easy that lasts a few days.
Some of the cheaper options they had today:
Eye Round roast
Bone in Beef Shank
Ox Tail
Tri-tip whole peeled (a bit more expensive than the others)
Brisket
I've cooked tri-tip and brisket before but not the others. Anyone ever tried any of these and have some suggestions on how to cook? I'm considering just throwing them in the crock pot in place of the chuck roast since they're a little cheaper and seeing how it comes out

Do you have an immersion cooker? Eye of round is awesome done sous vide to medium rare then seared.

I often buy sirloin top cap (Picanha) and flat iron steak when they have it. Sirloin top cap has gone up in price and has a lot of fat, so I don’t know how cost effective it really is now, but when I started buying it it was $5.99/lb. Now it is $9.99/lb I think. Delicious when cooked properly.

I just saw they had beef shanks for $5.99/lb. I bought a bunch and have been making some Osso Buco.

I’ve seen people buying the whole chuck roll and cutting it into steaks. I think they have grass fed halal.

I used to buy their flap meat. Went up in price.

90/10 ground beef chub. You have to knock on the window and ask the butchers for it but they should have it.

i used to get the sirloin flap which was awesome as a steak or fajitas but I havent seen it lately.

Interesting. How much is this a pound?
I normally buy their 85/15 grass fed grass finished beef but would prefer 90/10
They used to sell ground bison and 93/7 beef at my location but now only have the 85/15 grass fed and also 75/25 wagyu .

I used to only buy the American Wagyu - mostly NY, but some ribeyes and sirloins.
Now, I mostly do Prime, almost all NY.
I stay away from Choice.

Pichana and Flat Iron. Plate ribs are also pretty good.
