I personally try not to eat wheat type carbs (breads, pastas, etc), in my opinion if you're going to have carbs eat a sweet potato or something like that. I don't think a couple of pieces of bread is going to kill you though.
I tried to do it this week. Grilled a bunch of chicken on the pit Sunday. Pick up a salad two of the days to eat with the chicken breast. Stir fried some sweet potatoes and broccoli Tuesday night. I couldn't stand to eat it again by today. I can maybe make 3 days then I'm tired of it. I rathered a simple ham sandwich today than eat it again.

I have the same problem. I usually cook 2-3 protein sources and a few different veggies/carb sources for this same reason.

Same. I just figured if the OP was fine with eating a sandwich everyday, he might be ok with that.
When grilling the chicken, throw a pork tenderloin and piece of salmon on with them or something to that effect.

No. It has the patina of being healthy due to years of misinformation foisted upon us. But in reality, it was pretty bad. You essentially had an extended dessert and washed it down with water.

I've been doing 16-8 intermittent fasting so my lunch is actually my breakfast. I usually break my fast with MCT/coconut oil shot with my 5th or so cup of coffee (which, F California, ain't carcinogenic).
Eggs/omelette w some combo of lots of spinach, smoked salmon, bacon, cheese, onions, tomato....
Avocado w olive oil or some guac.
I usually just have one more big meal. I'll do full fat yogurt w berries, pecans and macadamia nuts as a snack.
My wife makes some kick arse low carb blueberry muffins/coffee cakes that I load w grass-fed butter.
Just now, I had a rare fast food lunch (first meal of day) because I'm doing house projects, and didn't want to stop to buy groceries and make something--2-for-1 Whoppers hold the ketchup/mayo. Added sugar free BBQ sauce, avocado mayo and cheese and put them both on one low carb wrap. It was actually damned good, pink slime and all!

Thanks for the info. A lot of good ideas in this thread.
Yesterday I had a big salad full of green/purple lettuce, tomatoes/onions/cucumbers, went easy on the Caesar dressing. Finished it off with a rotisserie leg of chicken (12g protein). Drank water.
Trying to improve.

Why are you eating so little protein? If all you had for lunch yesterday was a salad and one chicken leg, you proabbly only ate like 400 calories total.

The main problem with this meal is very little protein. Protein is key.

Good question. My plan had been to eat a light lunch, because generally for dinner I have a large serving of chicken/pork/beef (along with veggies). I thought I was being smart to limit the chicken serving to one leg, rather than a leg+thigh, since I was planning on eating a good bit of meat later for dinner. But now I'm questioning the wisdom in that plan based on the feedback I'm getting

Use a TDEE calculator online. Enter your height and weight and other info to get your maintenance calories. Then enter waht your eating into MyFitnessPal to see how much your eating. You don't have to do it forever (I no longer track), just until you have a pretty good idea of what your intake is and the make up of foods.
