Did I just eat a healthy lunch?

PB&J on honey oat bread. Sun chips. 10 grapes and 4 strawberries. Water to drink.
I felt like it was decently healthy. But am I fooling myself? Figured you guys would know. Thanks.

You can burn whatever off at recess so you should be fine.

Depends on your definition of "healthy," I wouldn't personally eat that. Your calories consumed was low, but that was a lot of sugar and almost no protein. Essentially, you didn't get much bang for your calorie buck.
Just FYI, the keto people are going to tell you you're going to die.

This is what I was a little worried about. The peanut butter was of the "crunchy" variety (8g protein per 32g serving) - does that move the needle any? The oat bread had 3g protein per slice.
The Sun chips were the "veggie harvest" type. Probably not too healthy but not terrible either?
I tried to keep the fruit serving on the smaller side because of the sugar. I just hate to skip out entirely and lose the vitamin content.

Processed PB, processed J, processed bread, processed chips,
IDK where you got your grapes and strawberries so those might be good.
Water is ok unless your city has bad water.

I rotate PB&J with a ham/turkey every other day for lunch. I usually eat some type of beef/chicken/pork for dinner with veggies.

Enjoy your insulin spike. The strawberries were healthy (in moderation), less so peanut butter, but fine in moderation too, as long as no sugar added and you get lots of omega 3 to balance out the high omega 6 in peanuts.
Grapes are super high sugar, but their fiber helps limit the spikes. But way moderate grapes.
Everything else (besides water) is terrible.

IMO:
You could do worse. But you could do much, much better. That meal was all carbs and fat, very little protein.
Here's an example of my lunch.. it'll be a lot more satisfying and nutritionally sound:
-6oz Chicken Thigh (chunked and cooked in salsa and seasonings)
-1.5cup roasted broccoli
-1 cup roasted golden beets
-1/2 cup sliced strawberries
I highly recommend meal prepping.. My wife and I cook a bunch of stuff on Sunday and leave it in big containers in the fridge, and each night I will pre-pack my lunch for the next day (rather than keeping 10 meal prepped containers in the fridge at all times).
You could do worse. But you could do much, much better. That meal was all carbs and fat, very little protein.
Here's an example of my lunch.. it'll be a lot more satisfying and nutritionally sound:

Ham sandwich, homemade potato chips, 2 chocolate chip cookies, and a diet coke today. But the sandwich had spinach and tomatoes on it, so all cool. I'm basically a health nut.

I've been meal prepping my lunches for the past few weeks.
My go-to right now is
sausage and kale frittata and broccoli salad (with grated carrot, cashews, and dried cranberries) with a greek yogurt dressing
how am I doing? both are super easy to make and hold up well for a week

If you're fine eating the same ole same ole boring lunch why not make 5 chicken breasts or some things and bring that instead? More protein, no processed food and no sugar.
I personally try not to eat wheat type carbs (breads, pastas, etc), in my opinion if you're going to have carbs eat a sweet potato or something like that. I don't think a couple of pieces of bread is going to kill you though.
